Banana cupcakes & Peanut Butter frosting



Cupcake is such a fun cake to eat. It's in an individual serving size. You can decorate as you like. You can make it varieties: taste/frost/style/deco/.. Frosting make cupcakes soooooooooo irresistible. Anytime i see cupcakes, i just simply eat until full. Well, that's not good but i just LOVE them so much ^_^ !!!!

This Banana cupcake is so soft & tasty and frosting is so nutty. The whole cupcake get along together so well that you will finish the whole dozen before you even know :D Me, at least :P


Ingredients to bake a dozen of this, you will need:

For cupcakes:
  • 1 cup mashed ripe bananas (about 2 bananas)
  • 1/2 cup buttermilk
  • 4 tablespoons unsalted butter, melted
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • 1/2 cup all purpose flour
  • 1/2 cup whole wheat flour (or only all purpose.. So, 1 cup all purpose flour in total)
  • 3/4 cup sugar
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1/8 teaspoon salt
  • a handful of AERO choc ball or shredded coconut


How to:
  1. Preheat oven to 350 F. Line cupcake pan with paper cases.
  2. In a large bowl, whisk together -- flours +sugar + ground cinnamon + baking soda + baking powder + salt -- until well combined.
  3. In a medium bowl, whisk together -- mashed banana + buttermilk -- until smooth. Add in -- melted butter + egg + vanilla -- then mix until well combined.
  4. With a spatula, add wet ingredients into dry ingredients,stir until combined.
  5. Scoop the batter evenly into each paper cases. 
  6. Drop one choc ball in the center of each cupcake. Slowly press it down until covered. (or sprinkle coconut shredded on top)
  7. Bake until golden brown, about 20 - 25 minutes.
  8. Let cool a few minutes in the pan before transferring them to wire rack to cool completely.

For the frosting:
  • 90 g. cream cheese, softened
  • 90 g. creamy peanut butter
  • 1 teaspoon pure vanilla extract
  • 3 cup icing sugar, less if prefer not too sweet
  • a splash of milk, depend on consistency you want


How to:
  1. In a medium bowl, cream together -- cream cheese + peanut butter + vanilla extract --
  2. Add in -- 1 cup icing sugar -- mix until well combined. Add more until reach consistency that you like.
  3. Add -- splash of milk -- to smooth the frosting. 
  4. Wait until cupcakes are completely cool before to frost.
