"What a beautiful food!" That's the first thought i have on my mind when i first saw this recipe. Then, here come the second thought "I will have to make this". Doesn't matter what it's going to taste like (and yes! it tastes great :)). It's look so beautiful that i would love to have it on my dinner table this evening :) So, let's make it!

Baked apple cider (mini) doughnuts
I love doughnut. Who doesn't?!?!?! :) Deep fly made doughnut sound unhealthy but since i heard about "Baked Doughnut" my mind just keep thinking about it "Doughnut .. Doughnut and Doughnut". Finally, today is the day, i am going to make it. Let's see!!!! or even better, Let's EAT!!!! :D
To be honest, there is, in anyway, the different between these 2 kinds of doughnuts. The texture of "Baked doughnut" is more like a "light" bread .. not as light as "Deep fly Doughnut" but thinking that it is healthier. Why not! Beside, the taste is great :)
I made "Baked Doughnut" once and it was so much fun to make. The method is like making a bread. (I love making bread! :)) The texture was a little bit dense. Of course, it was YUMMY. That's for sure :) So, this time i try "Baked Doughtnut" in Doughnut pan :) It soft, light, and yes, again YUMMY as usual :) It is more like a cake in circle form but that's still make me feel good eating them: healthy and it's DOUGHNUT!!!! ^_^
Ingredients:

makes about 24 mini doughnuts
- 1 cup unbleached all-purpose flour
- 3/4 tsp baking powder
- 3/4 tsp baking soda
- 1/4 teaspoon salt
- 1 tsp ground cinnamon
- 1/2 tsp apple pie spice
- 1 egg
- 1/4 cup packed brown sugar
- 1/4 cup unsweetened applesauce
- 2 tbsp pure maple syrup
- 3 tbsp apple cider
- 3 tbsp plain yogurt
- 1 and 1/2 tbsp canola oil
Direction:
- Preheat oven to 350 degrees F.
- Lightly coat "mini doughnuts pan" with cooking spray. Sprinkle "mini doughnuts pan" lightly with sugar, shake out excess.
- In a medium bowl, whisk together -- flour + baking powder + baking soda + salt + cinnamon + apple pie spice -- set aside.
- In a large bowl, whisk together -- egg + brown sugar + applesauce + maple syrup + apple cider + yogurt + oil --
- Add wet ingredients to dry ingredients, and stir just until combined.
- Pour the batter into a zip lock bag. Cut one corner of the bag.
- Squeeze out the batter, almost 3/4 full, into each space. Not more than 3/4 full please!
- Bake until lightly golden brown, about 5-7 minutes. Wait a few minutes then carefully (tapping) remove doughnuts from pan and let cool completely on a wire rack.

Blueberry Pull Apart Bread
Hi everyone ^_^ I am so sorry, i really am. I was not update my blog for such a long time. And between that time, i am so happy to know that i have 2 new followers. Thank you all of you SO MUCH for interesting in what i am trying to share. It's important to me and i am really appreciate. Thank you ^_^ Thank you.
Well, talking about my excuse for being absent. I can only say that it's "Spring" fault. Don't get me wrong. After such a long winter we have had, we are so happy to see "spring" finally arrived. The problem is as soon as the sun come out, my kids can't stop asking me to bring them ouside .. and of course to stay with them ALL DAY outside. No more "cleaning" time, no more "cooking" time, no more "baking" (sniff ..) time .. and of course no more "blogging" time. I know, I have to manage time differently than during the winter. I am working on it :)
P.S. Even when i didn't update my blog, i always think of "doing" it and always thinking of new recipes to share ^_^ Please stay with me :)

Cinnamon Roll Sugar Cookies
Some or all of you might begin to notice by now that i like Cinnamon Roll ^^ Yes, i do. I like Cinnamon Roll a lot, so much. I find them such a special dessert. They are so much fun to make: knead, roll, cut, ... just like sweet bread. Lovely texture when touch, look nice in special in form of spiral and taste that can be vary as you wish. Most of all, when they have the frosting on .. icing, cream cheese, caramel pecan, .. so hard to resist. Like this "Cinnamon Roll Sugar Cookies". I never try Cinnamon Roll in form of cookies before until now and i cannot stop baking them ever since. If you ever try once, you too, will do it again and again ^^ Yes, please try!

Hermit Cookies

I just love baking with spiced. Not only in the kitchen but just the whole house smell so good with it. It makes me feel at home. Feel warm even when it's cold. Also, it makes me feel so hungry that i feel more "eating" than "tasting" the batter before baking them. Yes, i always taste the batter .. all kinds of batter! Sometimes i find them even taste better than baked one :D This Hermit Cookies is just so de-li-ci-ous. I also like the contrast of the color of cookies and the icing. They get along so well together. I baked this once for my lovely neighbors who decided to all come outside on one shiny afternoon to take a sun bath and chat between parents while, at the same time, look after their kids playing all together on the street. What a nice neighborhood! and and and they said they like this cookies ^^

I still have not finished all the pear in my fridge yet. Enjoy it when fresh but i bought so many that it become ripe quickly all at the same time. No panic, i have an idea. How about this Pear and Pecan Slice. It change a bit from cake ^^ Sour cream, pear and nuts make such a nice combination. A thin layer of cake base with crunchy nut .. sweet pear pieces .. and cream sour cream on top. Good one. So, let's make it today ^^

It's cold outside. I need a cup of tea (and hot chocolate for my kids ^^) but what can we bake to eat with? I have lots of nice (well ripe :D) pear in my fridge so why not bake something with pear inside? ^^ This is a very nice soft and tasty cake. Smell of warm cinnamon everywhere in the house. Sweetness from dates and runny caramel sauce on the cake .. Happy both mommy and kids ^^
