Banoffee Pie


Banana, caramel, cream .. how can you go wrong with these? But to make a nice presentation, here come the yummy and crispy crust. Nice shape, taste great. Let's make now! ^^

Preparing time: 5 minutes (for the crust) + a few minutes to spread each layers :)
Waiting time: 2 hours (in the fridge)

Serving size: 8 - 12 servings

Ingredients
  • 250 gram graham cracker
  • 125 gram melted unsalted butter
  • 225 gram Dulce de Leche 
  • 3 - 4 banana
  • 125 ml whipping cream
  • 1/2 teaspoon pure vanilla extract
  • 1 tablespoon light brown sugar
*This can be made at any amount you like. If you don't like too sweet, just reduce an amount of Dulce de Leche. If you love whipped cream (as much as i do), just double an amount i post in the recipe.

Direction

Pan: 9" round pan with lose bottom *you can use smaller pan. Smaller pan will give a thicker crust. Anyhow, it won't effect the taste! ^_^

Prepare pan: Cut parchment paper in round shape, 1 cm bigger than the size of the bottom of the pan. Lay the parchment on the bottom of the pan. This extended edge will make it easier for you while transfer to serving plate.
  1. In a small microwave safe bowl, heat butter until all melted.
  2. In a food processor, crumb -- graham cracker -- in powder. Transfer into a medium bowl. Never mind if having some in big grain (i mean "grain" not "piece") as you want you crust to be quite smooth.
  3. Pour melted butter into crumbed graham cracker's bowl. With a spatula, mix until well combined. 
  4. Pour wet crumbed into the pan. Spread it all over the bottom of the pan, then press to compact all crumb into smooth surface. Put in the fridge for an hour.  You can fridge it less longer if in hurry but please do not skip as this process will firm the crust, make it easy to spread Dulce de Leche over.
  5. Spread -- Dulce de Leche -- all over onto the crust. Put in a fridge for another an hour. Again, you can fridge it less longer if fed up to wait but please do not skip as this process will firm the caramel, make it easy to lay banana sliced on.
  6. Cut -- banana -- into sliced (thickness of 1/2 cm or as you like) and lay them slightly overlapped each other. until cover the whole surface.
  7. In a small bowl, whip together -- light brown sugar + whipping cream -- until firm.
  8. Spread all over the banana.
  9. Put back in the fridge until serve
*To place the pie on serving plate, place the pan on the small bowl and let the side of the pan lose off. Carefully transfer the pie onto serving plate, slide the pie gently to slide out the bottom of the pan and with left hand blocking the right side of the pie, make a slow and gently movement by pulling out the parchment under the pie.

Pour wet crumbed into the pan. Spread it all over the bottom of the pan, then press to compact all crumb into smooth surface. * i use the flat bottom of a cup ^^.  

Put in the fridge for an hour. 

 Spread -- Dulce de Leche -- all over onto the crust. 

Put in a fridge for another an hour.

Cut -- banana -- into sliced (thickness of 1/2 cm or as you like) 
and lay them slightly overlapped each other.

 until cover the whole surface..

Hungry already .. Huh ;) but we are not done yet!
 In a small bowl, whip together -- light brown sugar + whipping cream -- 
until firm.

 Spread all over the banana.

 .. all over ..

Put back in the fridge until serve.

Just before serving .. why not? .. sprinkle with grated dark chocolate ..
