Some or all of you might begin to notice by now that i like Cinnamon Roll ^^ Yes, i do. I like Cinnamon Roll a lot, so much. I find them such a special dessert. They are so much fun to make: knead, roll, cut, ... just like sweet bread. Lovely texture when touch, look nice in special in form of spiral and taste that can be vary as you wish. Most of all, when they have the frosting on .. icing, cream cheese, caramel pecan, .. so hard to resist. Like this "Cinnamon Roll Sugar Cookies". I never try Cinnamon Roll in form of cookies before until now and i cannot stop baking them ever since. If you ever try once, you too, will do it again and again ^^ Yes, please try!
Look at them?!?!?! Don't you want to taste them? even just one? Me, i cannot stop putting one in my mouth - one to frost - one in my mouth - one to frost. By the end of frosting process, i have only half cookies left :D (i only made 1/3 recipe though) and just when kids saw them, with a tiny pieces that fit well in their mouth, the other half was gone. Well, i did kept some for my husband but i must say that he cannot really taste them as there was not that much left for him :D

To bake this, you will need:

- 2 cups sugar
- 1 cup butter, softened
- 3 eggs
- 1 teaspoon pure vanilla extract
- 1 cup sour cream
- 6 cup flour
- 2 teaspoons baking soda
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 12 tablespoon butter, softened (sliced into 2 tablespoon 6 times)
- 1 and 1/2 cups packed light brown sugar (divided into 1/4 cup)
- 1 and 1/2 tablespoons ground cinnamon , divided
- In an electric mixer, cream together -- sugar + butter --
- Add -- eggs + vanilla extract + sour cream -- mix until combined.
- Slowly add in -- flour + baking soda + baking powder + salt -- mix until well combined.
- Divided the dough into 2 batches, place in plastic wrap in a disc shape and chill for at least 2 hours for best results.
- Once chilled, preheat oven to 350 F. Then cut each disc into 1/3 and roll into a 1/8 inch thick oval, about 12 inches * 5 inches.
- Spread each rolled pieces of dough with -- 2 tablespoon softened butter + 1/4 cup packed brown sugar + 1/4 teaspoon ground cinnamon --
- Start rolling from the long end closest to you, rolling into a log shape.
- Using a sharp knife, cut into 1/2 inch pieces of dough then placing onto a Baking sheet lined with parchment paper.
- Bake at 350 F for 9-11 minutes.
- Remove and let cool for 5 minutes before transfer to wire rack.
For the frosting:
- 8 oz. cream cheese, softened
- 1/2 cup icing sugar
- 2-4 tablespoons milk, to thin icing
How to:
- In a large bowl, beat -- cream cheese -- until softened and smooth.
- Slowly add in -- icing sugar + milk -- until desired consistency.
- Frost cookies then place in refrigerator until ready to serve. Best serve chilled!
