Mussamun Kai

Chicken Mussamun
- Thai dish -

You will need:


1 packed Chicken thighs, about 6 pieces
1-2 tablespoons Mussamun paste, more paste - more spicy
1 Onion
1 Potato, more if you like
1 handful Peanuts, more if you like
1 canned 400 ml Coconut milk
1-2 tablespoon Fish sauce, to taste
Palm sugar (or granulated sugar), to taste
2-3 tablespoons Canola oil (or vegetable oil), more paste - more oil

* Please do not shake coconut milk canned before use, we will need thick part first then the rest. Also, you can add more or less coconut milk, depend on how liquid you like your soup to be.

How to:

On medium heat, heat together - mussamun paste + oil --
As soon as you smell spice, add in -- coconut milk --
about 1/4 cup of thick part only
Cook until bubbling and red oil show up on the surface
Add in -- the rest coconut milk --
wait until boil before adding -- chicken thighs --
diced -- onion --
diced -- potato --
Toasted -- arachid nut --
Let chicken thighs cook a few minutes
then add in -- onion + potato + toasted arachid nut --
Cook until everything cook through, Done!
