Happy Sweet Easter, everyone ^_^


Wow, what a fun Easter holiday we have. Kids have no school: Good Friday and Easter Monday. Almost everyday, the weather is like "raining" in the morning but "nice sun shine" in the afternoon. But it doesn't matter what the weather was because kids still have fun playing outside anyway. The whole day of Good Friday, kids spend all day outside playing, running, ... oh yes, and a little film "RIO" in the afternoon. They love cinema! Saturday, fun Easter egg hunt with lots of kids in the neighborhood. We baked Easter cookies to share with them. And just before bed time, we dyed eggs ^_^

P.S. On the image above, with green background, is the scene that my daughter set up and ask me to come take a picture. She said "Mommy, please come have a look at something i want you to take a picture for Easter, please please". when i arrived, i was surprise and so happy to see it. It makes me smile ^_^ not you? ^_^

On Easter Sunday, family day, just 4 of us ^_^ Kids have Chocolate egg on Cereal nest & Bunny pancakes as a (sweet) breakfast. Then just after, an exciting Easter egg hunt (sweets and toys ) in the backyard. They have had so much fun running around, choosing what they want and don't want. Yes, believe it or not, there is something they don't want (at first !) but after taking all what they want/like .. then they noticed that there is something left, so they re-consider again if they want it or not :D They end up by taking everything .. nothing left on the grass ^_^ Bravo, Easter Bunny! Good choices! The day went by: playing & eating candies/chocolates. Ending the day by Hot Cross buns after dinner. Happy Easter Day! Easter Monday? Cleaning and cleaning of course!




Bunny Pancakes: I just use my favorite Pancake recipe. Then make it into bunny head shape using a spoon ^_^

Easter Cookies: I use my favorite Sugar Cookies recipe. Then cut them into Easter holiday shape: bunny, egg, ... ^_^

For the Royal icing, you will need: From Wilton
  • 1 and 1/2 tablespoons Meringue powder
  • 2 cup icing sugar
  • 3 tablespoons warm water
How to:

In a electric mixing bowl, at low speed, beat together all ingredients until icing form peaks, about 7-10 minutes. 10-12 minutes at high speed with a hand-held mixer. To thin for pouring, add 1 teaspoon water per cup of royal icing. Stir slowly. Then add 1/2 teaspoon water at a time until reach proper consistency.

Note: Keep all utensils completely grease-free for proper icing consistency.

For Cereal nest, you will need: 2 small cup
  • 1 cup mini marshmello
  • 1 cup (or more) cereal
  • 1/2 tablespoon unsalted butter
How to:

In a medium bowl, put together -- mini marshmallow + butter -- heat in microwave for 30 second, until mini marshmallow begin to puff. Take it out and stir until mix through then immediately add in -- cereal -- stir until all combined. Grease a small bowl or plastic egg shell with cooking spray. Divide marshmellow mixture in the the bowl. Press the middle to make a big hole .. shape it into "bowl" form. Let it sit until need. I use "Aero chocolate" to fill up the nest ^_^



For Hot (Heart ;)) Cross buns, you will need: From PioneerWomen
  • 2 cups whole milk
  • 1/2 cup canola oil
  • 1/2 cup sugar
  • 2 and 1/4 teaspoon active dry yeast
  • 4 cups all-purpose flour
  • 1/2 cup (additional) flour
  • 1/2 (heaping) teaspoon baking powder
  • 1/2 (scant) teaspoon baking soda
  • 2 teaspoon salt
  • 1/4 tablespoons sugar 
  • 1 teaspoon ground cinnamon
  • 1/8 teaspoon each: nutmeg and allspice
  • 1/2 cup raisins

How to:
  1. In a saucepan, combine together -- milk + canola oil + sugar -- Stir and heat until very warm but not boiling. turn off the heat and wait until it cool down to 110 F warm.
  2. Sprinkle -- yeast -- over the mixture. Add -- 2 cups flour -- and stir to combine. Mixture will be very sticky. Cover with a towel and set aside for 1 hour.
  3. Add -- 1/4 cup flour + baking powder + baking soda + salt -- stir until combined.
  4. In a small bowl, combine together -- 2 tablespoons sugar + cinnamon + nutmeg + allspice -- set aside.
  5. On a lightly floured surface, press to slightly flatten the dough. sprinkle -- 1/3 of cinnamon/sugar + 1/3 of raisin -- Fold the dough over itself and flatten again so the dough is "plain" again. Repeat the cinnamon/sugar + raisin process 3 times in total until finished all the cinnamon/sugar + raisin. You might not need to use all cinnamon/sugar.
  6. Glaze each roll. Bake until top of buns turn golden brown, about 15 minutes. Remove from pan and allow to cool on a wire rack.
  7. Make icing cross on each roll.


For the glaze, you will need:
  • 1 whole egg white
  • Splash of milk
How to: Mixing -- egg white + a splash of milk -- Then brush onto each roll.

For the icing, you will need:
  • 1 whole egg white
  • Icing sugar
  • Splash of milk
How to: Mixing -- egg white + enough icing sugar -- for icing to be very thick. Splash in -- milk -- as needed for consistency.
